Broccoli Bites

Wow it’s been a while since I posted up here!

Here’s an easy recipe for a healthy snack, side dish or “party finger food” that won’t leave you feeling sluggish afterwards.

This recipe does include eggs, cheese and breadcrumbs, but if you are vegan or gluten-free I will place suggestions at the end of the recipe for you, so you can still enjoy all the goodness of these Broccoli bites!

INGREDIENTS:

  • 2 florets broccol, chopped
  • 1 egg, whisked
  • ¼ cup diced onion
  • 2/3 cup cheddar cheese, grated
  • 2/3 cup wholegrain breadcrumbs
  • 1 tsp paprika
  • Salt and pepper
  • 2 tsp hot sauce (optional)
INSTRUCTIONS:

Preheat the oven to 180C and line a baking tray with baking paper. Set aside.
Boil the broccoli in boiling water for 2-3 minutes. Drain well.
Chop the broccoli finely and add to a bowl. Add the egg, onions, cheese, breadcrumbs, and seasoning. Mix well!
Scoop a large tablespoon of mixture and using wet hands and gently press between your hands into a firm ball or tater-tot shape.
Place on the bites on the prepared baking sheet and bake in the oven for 15-20mins or until golden brown and crispy. Turn the bites halfway to brown on either side.
Remove from the oven and enjoy on their own or with aioli or tomato sauce!

SUBSTITUTIONS:

EGG – substitute with a “flax-egg”. Combine 1 tablespoon of ground flax seed with 3 tablespoons of water. Stir well, and place in the fridge to set for 15 minutes. After 15 minutes, the result should be a sticky egg-like substitute.

BREADCRUMBS – substitute with almond meal, or ground oats (gluten free if needed).

CHEESE – if required, leave out the cheese and this recipe will still taste delicious!
