Maca Power Bars

I’m always on the hunt for a good muesli bar, but taking one look down the snack isle at the supermarket is usually enough to make me see red. So many so called “healthy” snack bars are absolutely packed with not only huge amounts of sugar, but also contain many artificial flavourings and preservatives that can’t be doing a whole lot of good for our health. Making your own muesli bars at home means that you know exactly what you (or your children) are eating plus it means cutting out a load of empty calories in the process.

These particular bars are packed with healthy omega 3 fatty acids, fibre, protein and also contain what I like to call the superfood MACA. Maca, also known as Peruvian Ginseng, is a type of tuber root vegetable grown in the High Andes of Peru and has been used to centuries due to its medicinal properties. A rich source of B vitamins, iron and magnesium, Macas many health benefits also include increased energy, hormonal balance, reduced menstrual and menopausal issues and increased libido and fertility.

Maca Powder

Ingredients:

  • 1 cup almonds
  • 1/2 cup pumpkin seeds
  • 1/2 cup ground linseed/flaxseed
  • 1/2 cup sunflower seeds
  • 2 tbsp chia seeds
  • 2 tbsp maca powder
  • 1/4 cup honey
  • 1/4 cup coconut oil
  • 1/3 cup almond butter
  • 1/2 tsp sea salt

Add the almonds to a food processor and blend to a fine consistency. Add ground almonds to a bowl with the sunflower seeds, maca powder, flaxseed meal, pumpkin seeds, chia seeds and salt. In a saucepan, combine the honey, almond butter and coconut oil. Mix together until all are well combined the add to the bowl with the dried ingredients. Line an 8×8 pan with baking paper. Spread in the mixture and pack down tight . Place in the fridge to set for approximately 1 hour. Cut into desired squares or bars and enjoy!
