Healthy Mince and Chilli Bean Burritos

This is recipe is a healthy take on the old burrito. I encourage you to use the lettuce as a wrap as it is a perfect way to cut a lot of calories out of your meal as well reduce your carbohydrate intake in the evening.

• 1-2Tb olive oil
• 1 red onion, finely diced
• 1 clove of garlic, diced or crushed
• 350g lean beef mince
• 1 can of chilli beans (I like to use hot*)
• 2 tomatoes, chopped
• 1 avocado, chopped into cubes
• 1 cup of grated cheddar cheese
• 1 pottle of “lite” sour cream
• Iceberg lettuce leaves, washed and
patted dry

In a large frying pan, heat the olive oil. Add the diced onion and garlic and brown. Add the mince and cook breaking up any lumps until brown. Add the chilli beans and simmer on a low heat for about 10 minutes. While the mince and beans are cooking, chop the tomatoes and avocados and grate the cheese. Once the mince and beans are cooked through, remove from heat and spoon into 2 stacked lettuce leaves. Top with avocado, tomato, cheese and a dollop of sour cream.

*I like the burrito mixture spicy, so I add in about 1 tsp of chilli flakes to the mince and use the hot chilli beans. If you don’t like spicy foods, you can buy mild or medium chilli beans or if you prefer, buy plain red kidney beans.
