Spicy Black Bean Salad

This fresh salad is absolutely packed with antioxidants, vitamins, and live enzymes. It is very low in fat and high in fiber so this salad makes a perfect cholesterol lowering meal. This salad is great on its own or for a more hearty meal, it can also be served in lettuce leaves or a wholegrain tortilla as a wrap, and can also be served over cooked quinoa or cous cous.



  • 3 cups of canned black beans
  • 4 cups chopped tomatoes
  • 3 cans of corn kernals (or use fresh corn)
  • 3 spicy peppers such as jalapeno, diced 
  • 1 red capsicum, diced
  • 1 cups sliced green onions or diced red onions
  • 1 cup chopped coriander
  • 1/4 cup extra virgin olive oil
  • the juice from 2 limes
  • 2 teaspoons of  sea salt
  • 1 to 2 teaspoons ground cumin
Place all salad ingredients into a large glass bowl. Whisk the ingredients for the dressing in a separate small bowl. Pour dressing over salad and gently toss together.
