Easy Lemon Cheesecake

This WICKED WEDNESDAY recipe is an easy lemon cheesecake. Enjoy!

Ingredients: (serves 12)

  • 1 packet vanilla wine biscuits, crushed
  • 50g butter, melted
  • 1 tin (395g) sweetened condensed milk
  • 125g cream cheese, softened
  • Half cup (125ml) lemon juice
  • Grated rind of 3 lemons

Crush the wine biscuits by putting them in plastic bag and going over it with a rolling pin. (Do not crush them using a food processor or the pieces will be too fine and the base becomes powdery).

Add the melted butter and 1tsp lemon rind and mix.

Line a 22cm pie dish with the mixture, remembering to spread it up the sides. Place dish in the fridge while you make the filling;
Put the cream cheese in a large bowl and microwave for about 30sec.
Mix it and add the tin of condensed milk, all the lemon juice and remaining rind one at a time.

Put this mixture into the base and put it back in the fridge to set.

While the cheesecake is setting, start to make the lemon curd. Add the butter and sugar to a glass bowl and place this over a pot of simmering water. Once the butter has melted add the lemon zest and juice. Keep stirring until mixed.
Beat the eggs and slowly add these to the glass bowl stirring constantly. Keep stirring the mixture until it thickens and the spoon leaves a trace through the mixture.
Empty into a container and allow to cool. (Do not add to cheesecake while hot.)

Once cool, smooth over the cheesecake and allow to set in the fridge or leave in overnight.
